None of that changes the fact that SLa Italians say red gravy instead of sauce. In fact, if you are from SLa and say “sauce” I automatically assume you aren’t Italian and am not interested in tasting your “sauce”.

I grew up never hearing anything but it being called gravy. My Nona called it gravy and u don’t argue with Nona.

I’m going to Italy to visit my family in 2 months. They call it ragu bolognese or just ragu (no “sauce”). Bolognese comes from the city of Bologna where the meat based ragu was more frequently used.
Again, none of that changes the fact that the Italian SLa community says “red gravy” instead of “red sauce.” It’s a local culture term that is by far the norm despite your dispute.

This is really a case of Old World meets the New World. Some immigrants may have translated Italian for what they put on their pasta as gravy, while others translated it as a sauce and the translations have been passed down through the generations
