It's crispy, fatty goodness. Cooks would deep fry bacon to save time during prep.

I don’t see how you could go wrong with that.
One guy who used to come out with us could expertly prepare blackened redfish. One of my most memorable meals (likely not the healthiest) was blackened redfish with a side of deep fried bacon.
