i should have taken a pic.... trust me they were plenty big enough. They could have been a size smaller and it wouldn't have been an issue

Yeah that matters as well. I usually get them from someone who crawfishes in the atchafalaya. Late Feb/Early March - End of June, Early July is the best time to eat them. Towards the end of the season, they start getting a little harder, but the size varies more, but they are always within medium to large size. The larger ones are harder as well, but... And I guess it depends on what pond you get them from..but sometimes the pond crawfish have softer shells and they don't hold the flavor as well..

But it really comes down to who boils them. I went to a boil last year and the guy boiling them... I don't know what he put to boil with them, but he waited until after they were boiled, put them out on the table then put salt on them.. That was probably the least seasoned crawfish I ever ate.
