Well, we know basic chemistry and things that are essential to basic life. H2O however is plausible that it's not necessary, and instead methane could theoretically be its substitute for an organism. Granted, Carbon is most certainly required for biology, as it can form more combinations than every other element combined.

Its temperature is hotter than the Earth from my understanding.
I remember watching a show about this where they said without Jupiter, no life on earth would have ever been possible for the very reason you bring up.

On another show I watched they demonstrated why water is so important. Basically it boils down to the fact water is a great solvent unlike other liquids including methane.

basic "junk" science statement, "may be much higher" is as good as saying it also may NOT be much higher too..
As for your "depends on water"..
Hydrogen is by far the most common element in the universe, Oxygen is something like 3rd or 4th.. what do you need for water?
Water is not really this "rarity" people seem to imagine that it is.
