The markup goes down as the price of the bottle goes up. FACT.
Restaurants know there is a ceiling on how much they can charge and people who buy more expensive wine know what they are paying for.
The OPPOSITE is true on champagne.
Also -
ODD YEARS are better than EVEN YEARS - ESPECIALLY on wine from Italy, France and Spain (or anywhere where there are more microclimates based on elevation). More global moisture in odd years thanks to El Nino.

Actually it had EVERYTHING to do with your OP and I've set up at least a dozen wine lists for openings of restaurants. The majority of which were fine dining.

I can't believe that a thread has gone on for this long about wine. fricking Franzia barely has any arsenic in it and costs ~$12 for ~6 bottles of delicious crisp white. Just order that shite when you go out you uppity see you next Tuesdays.
