Of the ones not mentioned. My dream car started from Cannonball Run. I'm sure the girls helped:

That is the car that actually convinced the original organizers of the Cannonball Run to stop the race. The car in the opening of the first movie is that very car that was owned by someone who was going to enter it.
The organizers saw the car, and knew the driver wasn’t capable of driving the car to its limits. They got afraid multiple people were going to be killed as cars advanced. So they called it off.
But yet the Isle of Mann TT still exists.
I’m going to go and witness that race for myself one year.

the race still is run
the race was called of for a few years, resurfaced, and still continues as mostly single runs
when it was called off for 1979/80 I was bummed out, as I had my 1972 challenger ready to go, other than extra fuel tanks (blueprinted 340 400 HP, 2:77 rear gears installed)
the kicker, I was in the AF in Grand forks, so myself and other driver were gonna have to run from ND, to NY, to Ca, and back
the story of the first run, and the unlikely winner

pecifically the one with the original engine and not the movie version with smaller one. They deemed the car "uncontrollable" with the original engine.

The mid-engined car had a tested and confirmed top speed of 194.8 mph (313.5 km/h)[1] and could go from 0 to 60 mph (97 km/h) in 4.1 seconds, with more than 440 hp (328 kW) under the hood coming from its relatively small displacement of 2.2L 4 cylinder forced induction engine
What engine did they wind up using?

It was still ran. But not by the original organizers. Just groups who organized it from the original starting and ending locations.
When the original guys were invited to the guys house with the black Countach, and he was bragging that he now had the car to win it, they were convinced the guy was going to kill himself in it. So they called it off.
But the copycats kept it going sporadically. Even a group calling it the gumball rally.

Yes, it would be the Aston Martin but the insurance premiums would be sky high.
