1) Next time she gets crabby let her know how it makes you "feel". Try to say it in a kind way.
If she continues, then
2) ask the kids how it makes them feel when their mommy speaks to them like that. When she hears it from their mouths, it should "wake her up".
Most of the time a person acts like this they are aggravated about something completely unrelated to what they are crabby about.
Ask her "What is bothering her." If she blames it on something kinda lame, that is not the real problem. Ask her, "What else is bothering her." You may have to do this a few times.
When I start to get upset about little things, I ultimately realize the "big" thing I am most upset about. Once I resolve the large issue the little things no longer bother me.
Most people are like this.
Worst case is that her hormones are off, and the little things are the only things bothering her. You might need to take a vacation with the kids and ever her home.

Whenever she gets in one of those moods, don't argue, or get defensive. Simply do something totally ridiculous to make her laugh. She should at least crack a smile. This subconsciously shows her how ridiculous she is acting. It's even more powerful, if your kids chime in. Most of the time, it works. If you can't snap her out of it, you and your kids are screwed, and it is serious.
