We aren't completely devoid of instinct, but we don't depend on it in order to function the way animals do. You don't see adult dogs teaching puppies how to be a dog, or adult birds teaching chicks how to be a bird. They just know, because they pass knowledge from generation to generation genetically. We pass it organically, and therefore can absorb and utilize new concepts as a species much more quickly than they can.

Dolphins have language but no thumbs/hands.
