This is actually not correct. Flat bills are constructed differently than normal hats bills.

And not all do that, a typical flat bill now has a wider bill than your traditional hat and it is made to stay straight. When you attempt to bend it it becomes a bumpy/wavy look but it will slowly transition back to a flat bill look.
I learned this the hard way as I attempted to bend them and then because of the bill being larger it looks effing stupid once it is bent before it goes back straight.

Yup, flat bills may have started out as just a flattened bill, but now they are cut different. In addition to what you said, if you curve a flat bill the cut of the bill where it meets the hat will change shapes too. It won't fit the head the same way.
