Another major thing about this case that hasn't been touched on yet is the bank allowing the family to grab all the money before contacting the executor of the will (not matter who the executor is).
How does this happen? Ms Plummer obviously didn't want her kids or grandkids to have the estate.
The money is gone and I doubt the estate will get it back.

I'm wondering if there was another person on the account. If so, they probably didn't let the bank know Ms. Plummer had passed away before withdrawing the funds.

She could have been unduly coerced. it happens all the time. She could have been confused and wated attention.
If i were the family I would calim she was not in sound mind unless it was proven otherwise.
The family had a stranger call them immediately after the lady's death and put the house up for sale. What would you have done to protect her assets?

It was a joint account. When one owner of a joint account dies, the money automatically becomes owned entirely by the other owner on the account, and this money does not have to go through a succession or have estate tax levied on it. It is considered a tacit gift.
For example, if you and your father have a joint account that he put $1000 in, you can both add or withdraw money to that account, right? If he dies, you are free to continue adding or withdrawing money from that account because you still own it. It goes from being owned fully by both of you in indivision, to be owned by you in full.
The family member who was on the joint account had every right to withdraw any funds from the joint account.
