I don't think anyone is defending the thiefs. It's against the law. We don't agree with it but I'm definitely not gunning someone down who stole something from me and they're running away. My delicate arse is not going to jail.

Good question. My guess is that would not be justified, unless they were in their own home, business, or vehicle when he started driving towards them. Also could be justified if he was driving at them intending to hit them, rather than just trying to get away. Generally, you don't have a right to stand your ground as a pedestrian in the street (or even in your driveway). You would be expected to try to get out of the way of the vehicle before shooting at the driver.

Of course a human life is worth more than material possessions. The problem is the thieves didn't understand that and felt it was worth risking their life to obtain said material possessions.

It seems your problem is that you under the impression that this series of events was the fault of the party that reacted, not the party that acted.

No it’s the property owner’s fault for committing murder. If you have to murder to protect your possessions, you’re living beyond your means.

Killing someone who is committing felony-in-progress should be 100% legal. Let the courts deal with them if they're discovered only once the deed is finished.

And the person(s) who are charged with a crime for shooting a thief had a right to not have their property stolen and also has the right to a fair and speedy trial. None of this is up for debate.

And I would add, the jury of his peers part when preaching about a fair and speedy trial.
