I 'member back in the day working on the line late on a dead night like Monday or Tuesday the outside sign that conveniently had the switch in the kitchen would sometimes get "accidentally" switched off about an hour before the hard close. Not saying it is right but there is nothing worse than 15 minutes before close when you haven't had a table for over an hour an 8 top comes in that wants to order cocktails, browse the menu and order the most complicated dishes you serve. Yeah, those lines that were fully broken down and wiped down have to be opened back up though you do get good at just working out of bulk mise containers and not spilling on the stove, flat top, or oven. The poor pastry chef was the one that could really get fricked if they ordered something that had to be fired because they would be the last person out that night and likely have to be the first back in the next day.

I remember when Willie Mae's Scotch house was still open (before the fire), my sister & I were craving their fried chicken. Google said hours were open until 4:30p. Drove 30 mins and got there at 3:30p and they had already closed. So disappointed.

About two weeks later, I call before going this time. I asked why they were closed early on my previous attempt, despite the open hours listed on the door & google. They explained if it slows significantly, they'll board up. They told me "today has been busy" and they'll be open. My sister & I get there at 2:30p, and the frickers had closed. Now, that pissed me off.

It should just be considered a sunk cost to run your restaurant until close. It aggravates the shite out of me to come up on a restaurant closing early.

Why start cleaning up before close. Set closing an hour before you want all workers to go home.

What I would like to see is something I would sometimes come across traveling: a defined last seating time, defined kitchen closed time, and a defined “every patron must get the frick out” time. No confusion, no one being afraid to piss off the kitchen, etc.

It is just crazy to list operating hours and then not actually operate during them.

While I agree in theory, in the US, there is tremendous ambiguity about what a restaurant’s closing time actually means. If a store closes at 10pm, that doesn’t mean you can walk in at 9:59 and stay as long as you want. Yet, somehow, that’s what some people seem to think it means for restaurants. Now, it’s standard to let people stay some period after closing time for restaurants, but how long should staff be expected to sit there and stare at you after the restaurant has “closed”?

I genuinely don’t understand why nearly no one in the US simply lays it out.

Eta: None of this is to say anything about restaurants that literally shut their doors significantly before their posted closing time, especially counter service restaurants.
