Definitely bring refillable water bottles for use through the day. The recommendations on taking breaks mid-day is good as well. The biggest thing though, just adjust your expectations. It's the middle of summer, it's going to be hot and crowded. As long as you can remember that, you should still have a great time.
I would also make a list of what are "must dos" for you and your family and make those priorities. If you can get there at park opening, that helps as well as many people are still just waking up or getting ready to head out. You can get a LOT done in the early hours of park operations.
At Universal, they have the front of the line passes you can purchase. It's like Disney's fast pass system, but since it costs extra, less people use it (from what I understand). I've heard that in the busy seasons, it can definitely be worth the added cost.

I was there at New Years, I can only imagine how bad that curry smell is going to be when its 100 degrees.

There are several things you can do to help, and this is strictly from one squirrel to another. First thing is go as soon as the parks open each day. This will help you beat the lines, and heat. Book fast passes around your lunchtime. After your FP's are gone and you've eaten, go back to the hotel to swim. There's always activities to do there, and the pools are great. Head back into the parks for dinner and more riding. Avoid Extra Magic Hour Parks. Also, if you need to get out of the heat at any point, catch a show. The air is cold, the place is dark, and the wait is not long.

Freeze some Powerade/Gatorade/Water and bring a backpack with snacks and a few towels. They will melt throughout the day.

Go to Orlando Informerfor some good vacation tips. Also, there are other things you can check out while in Orlando. There is a NASCAR indoor kart racing place. The karts go up to 35-40MPH (it's really fun). Not sure if you or your family are wrestling fans, but you might be able to check out a WWE NXT live event or a TNA Impact Wrestling taping. The TNA tapings are at Universal and are free with admissions to the park (unless they changed something). I believe they have tapings in late July.
Also, at Universal, got to guest services and say it is your birthday and they will give you a birthday button. If one of the park attendees see it is your birthday, they might let you skip the line on some rides. It doesn't work all the time, but sometimes it does.
