Could be Asthma, Reflux, sinuses/allergies, or even tonsils/sleep apnea related. I used to deal with this constantly. Not so much the coughing at night, but first then when I woke up I would have awful drainage and coughing. I was literally coughing to the point of throwing up in the shower like 4-5 mornings a week.

Went to an ENT who suggested it was a combo of reflux and allergies. He said my throat looked irritated like from constant reflux, but it also could be related to sinus drainage and be irritate from that. I tried zyrtec and Claritin, Benadryl, even Flonase for the sinuses. Tried Prilosec and Nexium.

I got a second opinion after a few years with no noticeable results. It seemed to go away for a few weeks, then resurface. About this time last year it got really bad. I needed my tonsils out, and also did a sleep study. I had the UPPP and tonsillectomy surgery last May, and it has been great. This ENT seemed to think that my airway would get dry and irritated from snoring and the stopping breathing. I was diagnosed with sleep apnea. I still get the occasional coughing in the morning, but it is more like once or twice every couple of weeks instead of most days. Seems worse after I've had a couple of drinks the night before.

If it's only when you lay down in bed it could be a dust mite allergy. Get a new pillow if you haven't done so already. Google dust mite allergy symptoms and prevention. Anyway, I had the same symptoms and the first night with a new pillow cured me.

Reflux. How soon after you eat dinner do you lay down or lean back in a chair, like a recliner?
