Its not rocket science, you still have to have a username. Most likely cross referenced the name with credit card/reservation names. Didnt see any clients that matched. He could have checked that vegan facebook group and seen the same names from the reviews.
I once got a 1 start review with no comment. Fake name. Checked out the prior reviews, eventually found out it was a former fired employee. That employee worked for a company we did business with, so I contacted the owner. He said the employee claimed it was his SO and had the review taken down.
Its typically pretty easy to determine if reviews are real or not.

One time I ordered a vegan pizza and then added pepperoni, ham,and canadian bacon to it.
