We did the Princess breakfast for our daughter, and I recommend it. That time lapse photo has nothing to do with it. If one isn't prepared for the crowds, then that is their fault. Always plan ahead. That said, my daughter absolutely loved the breakfast. And I have no problems doing it again.
That said, the fast passes are highly recommended. Rides for that age: Its a small world, tea cups, cars, even the merry go round. Our youngest wasn't afraid of any of them...

Ride whatever they are allowed to ride but you know your kids better than anyone else and should know if a dark ride or a loud ride would be too much for them.
Plan on getting to the park early and do everything in Fantasyland first before it devolves into a crowded, tantrum filled cesspool of humanity.

Epcot (with the FP+ tiering) is kinda a PIA, so depends again if you and the wife want to split up.
Back to child swap...if you made a FP+ for you to do Soarin and a FP+ for your wife to do Test Track, you could really both end up using FP+ for both, BUT with Test Track having single rider you won't really need it.
The Lion King show is real cool in the land, plus Nemo, Turtle Talk with Crush and the character spot. It's kinda hidden now so it's a great opportunity to meet the classic characters.
Don't forget if you are a disney visa holder, you get free picture with the characters as well:

Did you try by using the app or the website?
The website works alot better for pre-booking FP+.

If you wanted Anna & Elsa, you needed to be on at midnight Eastern time and tried for one of the last days of your trip.
Sucks but that is what it takes now.
They have updated the stand by for A&E to where it's like booking a reservation for a table. There are only so many per hour so get there early to get one.

try booking individually. Meaning, instead of booking three, try booking one from (for example) 11:00 - 12:00, then another from 11:15 - 12:15, then another from 11:30 -12:30, etc.
Then you all just get in line together at 11:45 which is inside the window for all three people.
What day and approx time of day are you trying to go see them?

This is really the only option for those without FP+.
Arrive early, like 8 am early and head straight to Anna & Elsa Like almost everyone else. Then, you will get (basically like the old FP system) a time card/piece of paper that tells you when you come back.
Waits are still exceeding an hour, BUT rather than spending your first two + hours in line, you can be doing other stuff first thing in the morning.

We did that - the Buzz and Under the Sea are awesome in that the kids went crazy.

One of the best of them all. It's an interactive thing where all kids have a part and Belle talks/interacts with all of them. Mine were in awe (and Bell was hot, too...)
When you are in the Animal Kingdom, do the "Its Tough to be a Bug" 3D experience. The kids will love it.
