If I could choose only three:

Battle Cry of Freedom - McPherson (the best one volume history of The Civil War)

Grant - Jean Smith (brilliant biography and lucid account of Grant's campaigns)

Team of Rivals - Goodwin (engaging history of Lincoln's masterful political handling of the war)

From what you described, I think you might like Chancellorsville by Stephen Sears. It goes into good detail on that battle (which I find fascinating).

Apostles of Disunion by Charles Dew, if you're interested in the cause of the Civil War.

Shelby Foote trilogy

This is the correct answer. It's a staggering accomplishment that meets all of your criteria. Modern Library (I think) has excerpted the Siege of Vicksburg and the Battle of Gettysburg in two separate smaller volumes called respectively, The Beleaguered City and The Stars In Their Courses. They might be a good test read to confirm that the trilogy is what you're looking for.

I enjoyed Frock Coats and Epaulets - according to Amazon "A highly regarded psychological analysis of Confederate military and political leaders." It was first published in 1963, and is very well written, paced well. Maybe keep in mind for when you want to approach from a different perspective.
