I saw the same thing you did this weekend.. four jets (they were F-15s) took off initially, three of them did exactly what you described in the OP, the fourth took of normally. Right after that, two more 15s took off normally
About twenty/thirty minutes after that two F18s took off ima normal manner. I’m gonna guess they were training over the gulf. We see it all the time. They come right over my backyard while making their initial and final approaches. Watched them all my life and I love it

Those were T-38 talons. They are trainer aircraft that the Air Force use for supersonic pilot training, although they are being slowly phased out. NASA used to use them as chase planes, and i guess still do to a lesser extent. The NASA versions are still occasionally seen at GPT and Stennis Airport (HSA) going to or from Ellington Field in Houston (EFD)
USAF has training wings of T-38's at Columbus Air Force base in North East Mississippi.
