it's by no means an 8-3 job, i got to work everyday at 6:30am and was there til after 6pm on a regular basis, then still took work home with me.

Indeed. Here it's a crap shoot in where you'll land coming right out of college. I don't teach, but work in counseling. I went from a school where three of the students I worked with were murdered due to gang violence to one of the better schools in the state. To say it's night and day can't even begin to describe the difference when you have parents that give a shite about their kid's education (and not all of those kids come from good areas).
Both staffs work hard but the staff I used to work with deserves every penny and break they get and still don't get paid enough for the shite they deal with.

The previous school I worked at was the most stressful job I've ever had. And that's having worked in a psychiatric treatment facility for students of the same age before that.
It really all depends on where you land, how your district handles discipline, and how the community handles their kids outside of the classroom.

Money isn't as bad as what I see people posting... most of the parishes are starting over 40k now with many around 45k. Teaching gives me flexibility to work part-time in the summer or I can pursue other interest.

Right. I think people are looking at starting pay and fail to realize you move up the scale fairly quickly. Teachers make decent money.
