If they are feeding in grain fields they are very good eating. Perfectly legal to hunt swans in season in several states...most of the inland PNW, Virginia and North Carolina all have some legal harvest. Alaska and some provinces in Canada have swan seasons. It is kind of a big deal in most areas where they are hunted...Mattamuskeet was more or less built on swan hunting.
