Here's a link from SeriousEats.com (The best cooking site around imo) that explains why it's not necessarily worth it to buy Prime. Choice is so much cheaper and if you take the time to look at the cuts you can likely find stuff that just under what would be considered prime for a fraction of the price.

Yeah Prime filet makes zero sense. Prime is mostly about the abundance of fat in the cow. Filet is naturally an extremely lean cut.

Prime tastes much better than choice to me in a marbled cut like a ribeye though.

Choice is the better way to go most of the time unless it's at a high end steakhouse or something similar.

Probably as much mental as anything. Lots of dairy breeds are making its way into the prime market. Additionally the range for fat is not scientifically determined prime is "Abundant to Slightly Abundant" and Choice is "Moderate to Small". High end Choice+ is going to have almost as much fat as Prime-. The difference between Prime+ and Choice- should be significant though you aren't buying Prime+ in a store, that's all going to restaurants and specialty butchers.

It would be nice if they actually labelled things prime+, prime, prime-, etc. to make things easier for the consumer.

The grading is really not very useful to the end-users/consumers. The grades are extremely valuable to the buyers and sellers upstream who deal in entire carcasses. The USDA doesn't grade the steaks you buy, they grade the carcasses they come from. There can be large variations in marbling within a single cow carcass.

Anyone who only buys Prime because they think it's always the best cut or one who only buys Choice because it's always the best value, are making a mistake. Just buy whatever looks best for the price you're willing to pay, regardless of grade.

Filets most certainly can have marbling and, therefore, a noticeable difference in taste.

I bought some last week.

I got about 70 steaks and about 40 or 50 chicken filets for $275.

I have not complaints. Ill eat it all.

You picked Lobel’s prime which is certainly not one you will find at Costco.

So I’ll give you Allen Bros. Choice Filet.



There is virtually no difference. Certainly not 40 bucks a pound worth.

Allen Choice $53.80 lb

Lobel’s Prime $93.90 lb

This should confirm the different grades of prime and that the top steakhouses and top purveyors are getting the “moderately abundant “ or “abundant “ whereas Costco and most every other retailer is getting “slightly abundant” prime meat.

But I’ll make a deal with you. I’ll supply the Allen Brothers Choice and you supply the Lobel’s Prime and see if we can tell the difference. I’ll supply the wine as well.

And for the record I prefer a strip steak as to me it has much more flavor and even has a bit of chew that I much enjoy.

And I’ll ease out on a limb here and guess the steaks from the truck in the mall parking lot won’t be quite as marbled as these.

That'd be an epic meal. But hell, if spending $93.50/lb, might as well go $138/lb and get some real Japanese A5 Wagyu tenderloin steaks.

Ribeyes are a horrible cut of meat. Way too much fat. Give me a sirloin.

I have bought A5 Wagyu from Costco.
To compare the taste, texture, and all, we bought some VERY high end prime steaks with insane marbling.

Cost difference like you said was like 20-30/lb.

Totally different game. Prime tasted like an insanely tender, juicy, piece of steak. Wagyu tasted like butter that was infused with beef flavor. Insanely rich.
