In 2011, Payton used the TE's & RB's to chip giving Bushrod & Strief help with pass rushers on the outside. For some reason, Carmicheal felt last season there was no need for this & it caused Brees to get pressured & sacked from outside rushers more then in previous years.
One play that sticks out more then any other last season was a crucial 3rd down in the second meeting at Atlanta. Strief had just returned from injury & clearly wasn't 100% that game. Instead of giving Zach some help with a chip or a double team from a running back, he ended up having Jon Abraham one on one. Abraham blew by Strief for an easy sack, stalling a potential scoring drive at midfield.
Point being, if the tackles struggle at any point during the season, Payton will adjust accordingly just as he did in 2011. Remember, that was the same offense that set numerous NFL records. The offense will be fine in that aspect.
The bigger question should be, does the offense get the running game going to get back to the balance it had in the '09 & '11 seasons? If the running game is top 10 this season, then that takes away 1-2 possessions from the opposing offense. That in return will aid the defense.
Another bigger question on the defensive side of the ball is, does anyone step up & become a consistent pass rusher this season? That's still yet to be seen but my money is on Junior.

I was not a Bushrod fan. I think anyone listed can step into his shoes and do just as well, if not better.

Sucks that we need to plan around having a weak tackle, that delays RB's and TE's into their routes with the method you've described. Might see more loaded sets to the weak side this year if no one can step up the way tackles in previous years have.
