Not a fan of Train, but your post made me look up some videos. Not a bad job, and the band is tight.
They did a great job with the Zep cover. Pat was in a Zeppelin cover band for years. He may not be everyones cup of tea but he is pretty talented.
Their cover of Thank You is my favorite they do

Bands like Beach Boys and Eagles with tons of harmonizing are hard to get. Some of the songs are not as bad.
Bands with lots of instruments are obviously hard for a regular cover band to do. You just have to adjust parts and make it your own.
We do Maneater and there is a sax solo that we just do as a guitar solo. We had a fill-in guy one night that played sax and he did the sax part and it was great.
Like kingbob was saying, the vocals are always a challenge. I have to work harder learning the background vocals/harmony parts on some songs than just learning the bass part.

I imagine GNR would be difficult because of Axl Rose’s voice.

My Chemical Romance is almost impossible to cover well because their arrangements are very dense and their lead singer has crazy range.

The dude on stage singing Great White was spot on perfect. I've never heard a better karaoke rendition of any artist since.
My experience with this was in Windsor, Ontario. I also didn't know I was entering a karaoke bar...just thought a DJ was playing 4 Non Blondes "What's Up?" Get inside the bar and this girl is on stage just nailing it. Everyone in the bar was pretty mesmerized. I'll never forget that.

There is a Houston band that does a really good job covering Steely Dan. They are called Bad Sneakers!! Seen them in Houston a few times.

Outside of tribute bands, who focus on a specific sound and recruit players accordingly ... the toughest for bar band vocalist to cover - off the top of my head - are Robert Plant, Brian Johnson, Freddie Mercury and Nancy Wilson from Heart. All have not only range and power but such distinct timbre that is simply sole source IMHO.
I love watching the "School of Rock" videos on Youtube, there are hundreds of teenage guitaar players that are incredeble. They cover a lot ot classic rock like Yes, LZ, Queen, Boston, etc., almost always the singer is a 15-16 year old girl, the guys dont have the range.

I like watching these kids cover classic songs. The female singer is really good.
