Where do I start? Know a few random songs like Two Weeks. But need an idea of which album to start with, stand out tracks, etc...

Vecktamist is amazing.
Especially on vinyl.
While you wait for the Others is my favorite. If you can find a clean copy of a version of it with Michael mcDonald - Also good (not on the album).
But that entire album is gold.
Shields would be #2.

Yellow House is their best IMO. Followed by Veckatimest. I haven't cared for much of their other stuff.

I really like Veckatimest. Foreground is probably my top track form it, followed by While You Wait for the Others. You mentioned, Two Weeks, that is easily their most accessible song since The Knife, which is my personal favorite.
If you like their stuff, you should check out the Terrapin Station suite that was recorded by the braintrust of Grizzly Bear, Daniel Rossen and Chris Bear, along with members of The National.
