You didn't like anything on Lateralus? 10k days def wasn't on the scale of previous work, but it was a shift in a different direction. After many listens, it is great in its own right.
And TheDudesRug is a moron, TOOL would absolutely never play a venue like the Varsity, but if they did, it would be HUGE.
You could easily sell those tickets for 200 bucks a pop and it would sell out in a heartbeat.

If we use Grammy award winning as the principal criteria, and then start thinking about bands who were active circa-2000 and are still relevant or semi-relevant today, you get bands like U2, Rage Against the Machine, Deftones, Foo Fighters, Linkin Park, Tool, Coldplay, possibly Korn if they're still considered relevant, The White Stripes (if still considered relevant), Maroon 5, Wilco, Green Day, Black-Eyed Peas, Alison Krauss/Union Station, RHCP, OK Go, The Mars Volta, and Daft Punk.
Some of those can be struck from the list immediately because they don't feel like they would be considered a "big" show. Once you do that, I feel like you're left with Daft Punk, Green Day, Maroon 5, Coldplay, Foo Fighters, Deftones, Rage Against the Machine, and U2. Maroon 5 would just piss people off, so they're out. Daft Punk is too niche to be considered "big," so that's no good. Green Day is fading/has faded into obscurity. Other posters have rebutted Deftones.
That leaves Coldplay, Foo Fighters, Rage Against the Machine, and U2. Of those, I feel like Foo Fighters and Rage are more likely. I have no inside information and my research was hardly exhaustive, so don't take anything I say as authoritative. It's just conjecture and speculation.

Jones, I agree with you that Daft Punk is huge, but a significant portion of my friends don't share the sentiment. That's why I call them "niche."
ETA: I stopped looking at who had won a Grammy after 2008 because I figured anyone after that would be too recent.
