I have a freebie Pioneer QX8000a. Would it be worthwhile to spend a few dollars refurbishing it?

Yes...a 4 channel receiver. pioneer, Sansui, and Marantz made these in the '70's when "QuadraDisc" LPs were introduced...an early, analog surround sound!

So recently I've seen some friends start getting into collecting vinyl and getting turntable / stero for living room. If I wanted to spend around 2k for a set up, would I be able to get something decent and where do I start or if anyone has free time can you point me in the right direction, thanks

so I'm planning on getting some new speakers

Given the option, I will always veer to a floorstander...there is no replacement for displacement.

And PSB makes a great loudspeaker and has done so for years. They hit hard and low if you want them to.

I just picked one of these up with both the original steel and upgraded acrylic platter on Audiogon for $327. Came in last night, I'm hoping to set it up and test it out this evening.
And my Odyssey amp should ship out in 4-5 days. I ordered it back in March- he's a bit more behind than normal, but I'm really looking forward to comparing the pre/post new amp sound off the new table. I'll update with pictures after the amp comes in.

You will probably keep that amp for life. If you ever want to upgrade, get another one and strap (bridge) them for more power--they will drive just about anything with finesse.
Regarding the turntable--make a granite base and put IsoPods under it. River_man on here has done it. It will create more mass for the table and help deaden spurious vibrations traveling to the plinth. You can do the whole thing for around $100 (finding a scrap piece at the granite yard and having them cut it to your size and bevel the ends).
I just bought a slab of really cool patterned granite for the cabinet top in the audio room I am building. I need a piece that is 2'x12'--so that leaves almost a half of a slab that will be unused. I may have the cutter cut the remaining slab into sizes that are ready to use with the Project Debut table and package it with IsoPods as a "ready-to-roll" isolation package.
Here is my slab...
That pattern should look good under any color Pro-Ject table.

That would look great under my red table!
My pre is currently just a Marantz sr6009. My speakers are b&w 803m, and I have the matched (by series, but they are different finishes) center with some relatively cheap Sony floorstanders (ssf7000 or something like that) as rears. I may eventually upgrade to a stereo in a listening room and a dedicated 5.0/1/2, but for now I don't really have another solution for both home theatre and stereo, so it's a receiver up front.
ETA- I bought the "puck" center weight that you recommended, too

You will need an integrated amplifier or receiver. A receiver has a tuner and other crap and generally will not be as good as an integrated amp. It is called an integrated amp because it has the amplifier stage and the pre-amplifier stage built onto one chassis.
Modern integrated amps may have a DAC, phono stage, or both built into them. If it has one of these but not the other, no big deal as a separate DAC or Phono stage isn't too expensive. You just run them into one of the available "line in" inputs.
You will need a pair of speakers. Do you want bookshelf or floorstanders? I will always recommend stretching the budget and getting a larger speaker as this is where your bottom end and bass will come from. Do it now as it is a pain in the arse selling speakers used.
I usually recommend the Pro-Ject Debut Carbon table as a starter. It's hard to beat for $350. If you want to up the ante, you can always change out the cartridge to a better one down the road.
Also, I can help you with getting discounts at a few of the online stores (ElusiveDisc and MusicDirect) as I spend an assload at both these places. You should be able to get at least 15-20% off MSRP on most things.

The QUAD has a DAC built in....this means you can play computer files directly off your computer or a music streamer (sonos), and it will decode the file.
