The #1 takeaway from YS should be that George Cooper Sr. was a dedicated family man who put everyone else before his own needs, especially Sheldon.
The version portrayed by adult Sheldon in BBT is that of a reckless drunk who was damned-near worthless. A cheater, emotionally and verbally abusive, etc.
George was none of those things. All of the greatest experiences of Sheldon's childhood were because of George cheerleading for him, against Mary's overbearing wishes.
All they needed in the finale was a couple of VO lines from adult Sheldon explaining that he understands how great of a father that George was, but it was too difficult to bear his loss, so the easier thing to do was to mischaracterize him to his friends as he grew up. It's simple to hate the George that never existed.

I always figured this was the more reflective/human Sheldon we see by the end of BBT thinking back over his life.
He wasn’t purposely trashing his dad, that’s just how his then computer/alien brain described it.
But yeah, they could have added a few lines at the end explaining that.

Like some other posters have mentioned, the earlier season were better than the ones when Sheldon was older. We haven't watched the spinoff of Georgie and Mandy because the trailers just didn't appeal to us.
BBT is still one of the best comic shows to us. The writing and the acting were stellar. JMHO of course.
