Not Sci Fi, but The Warriors would be interesting. Tony Scott was developing a fantasy karate movie reboot for it, but it was eventually scrapped.

But the remake of Time Bandits is why I'd not be in favor for such remakes, unless they do it right. Terry Gillam couldn't even watch that mess and walked off after just 3 days.
