I can't pick a favorite but basically every line Doc says in the movie.

Connected to that, I've always loved when Texas Jack and Turkey Creek Jack Johnson are talking about Wyatt in the river shootout:
"You ever seen something like that before?"
"Hell, I never even heard of something like that."
Also, I'm a big fan of Doc near the end when he tells Wyatt "That is a hell of a thing for you to say to me."
