I started Clone Wars, and it seems like it immediately starts with just throwing you in and kinda assuming you know who Ahsoka and Ventress are and who the specific clones are. Makes it feel like I missed something, but I started with Episode 1

It's an anthology. Each story is about 3 episodes long and the episode order isnt chronological. Eventually you'll learn about each one.

clone is good
rebels is decent

resistance is terrible

All Lego and Roger series are good.

I’ve tried getting into TCW before but didn’t get sucked in for a binge.

Am enjoying and binging Rebels right now

There’s an entire movie that leads into the series. You need to watch that first.

Star Wars: The Clone Wars (animated film)

ETA: it is also on Disney+ under Star Wars: Specials.
