Not totally opposed to this since there's no established universe to frick up.

The problem, I suspect, with starting with the original characters is sales. Putting up new characters against the old , it would become abundantly clear with a quick look at the bottom line which sold more merch, which made more money for the franchise. I guarantee that us older folks who grew up on SW , and now had more income to buy stuff, for ourselves, our kids, their kids, etc... would far exceed anything Mary Rey or Soylo Ren would ever generate.
That's how they, KK and Disney Star Wars see the franchise. Not as a saga in a galaxy far , far away, to inspire fans, but as a profit generating engine, and nothing more.
* Their hubris would not allow any such side by side comparisons.

We are finally getting to the latest season of Clone Wars they just did and man is it heads and tails better than any of the new movies (except for Rogue One). Pretty sad when both baby Yoda and a cartoon have 100 times more depth, character development and likability than the flagship movie franchise does. If she is not out it is going to be bad.

Its important to note Lucas had a heavy hand in the clone wars.
