Yeah I am surprised because for me the first one really only has the uniqueness of the 4th wall breaks and meta jokes along with the opening going for it. Ajax is a boring generic villain. The plot gets really lazy keeping Wade and Vanessa apart.
The second one has Cable, Juggernaut, Domino, Peter, and way more awesome moments. Colossus vs Juggernaut was better than Colossus vs Angel. It's main issue is the meta and 4th wall wasn't as unique and a bit overdone.
Plus "Ashes" by Celine Dion is a certified banger.

Well I think you accidentally hit the exact reason most people enjoy the first more than the others
The first is a Deadpool movie firstly and lastly. Doesn’t matter that Ajax is a meh villain or the plot isn’t iron tight because the focus is establishing Deadpool and having a good time and it feels refreshing up against the stale marvel /dc formulas.that rely almost entirely on the villain's carrying the movie to interesting places
The 2nd and 3rd have decreasingly less Deadpool in lieu of the overstuffed comic book movie universe cameos and references - with the 3rds plot basically completely succumbing to the marvel machine for another mindless save the universe plot that sets up the next mindless save the universe plot
