I think at the point you are king, you throw out all of those conventions and use the regular stark sigil.

I'm pretty sure the Stark sigil has always been colored that way when used in the opening credits.

I think we're at the point now where nothing is done in a throw-away manner. A good example was the handshake between Dany and Asha, they focused on it and held the shot for a while for a reason.
Along that line of thought, Sam has the sword for some reason intrinsic to the main story (otherwise it wouldn't be included at this point in the series).

Probably going to figure out a way to produce more valyrian steel in one of those books. Having a already forged sword may help.

If all the tyrells are dead it would likely be whatever cousin or niece or nephew is heir to highgarden
or either a hightower or a Tarly
of course they probably wouldnt be very happy with cersei since she just destroyed their entire liege family
