All kinds of different ways. Sometimes leave it whole and cook it on the pit. Sometimes cut up in pieces and wrapped in bacon with some cheese and jalapeno. I personally love it fried but I know alot of people don't.
Thinking about cutting it into medallions and just searing it in a cast iron skillet. Might make a sauce with some red wine to go with it.
ETA I'm open to ideas though

Do this... It's simple but effective.
I use an infrared grill so it works great with it. Just get a super hot flame going on your grill.
Cover 2" medallions in Olive oil, coarse salt, cracked pepper
Wrap in bacon and sear 1-2 min each side then transfer to your cast iron skillet.
Put a pat of butter on each piece and finish in the oven to med rare. Internal temp around 140
Then finish off with a red wine reduction or something similar.
