Every year during Senior Bowl week here, my buddies and I stir up the same old joke. The North team coached by lets say by the Bengals coaching staff should scrimmage the actual Bengals team one time during the week. Then you have the South team coached by the Bills staff. They have to scrimmage the Bills team one time. How many college players do you think would bother showing up for the event if this were part of the deal? I know its just hypothetical but what the hell, right?

The Chicago All-Star game was competitive in its early years but once the talent pool grew in America due to inclusion in the late 60's/70's with more guys to draft from (and you had more guys to weed out once they got to the pros) the difference between the College All-Stars and the Pro team became dramatically different.
The Pro team facing that NCAA All-American team is basically a team with all the fat/busts/over-hyped players weeded out.
There's a reason the Chicago All-Star game stopped being played in the mid-70's between the two...the powers that be realized the divide between the two was just going to increase and the competitive jig was up.
That was over 35 years ago...I suspect the divide is far greater today with the greater selection of players and the competition that exists to make an NFL roster.

That's why it wouldn't be close. Sure, there are a few guys each year that can matchup with the pros(like Ndamukong Suh, Patrick Willis, etc.), but more than half of the all-american team will probably amount to very little in the pros their first few years...if they amount to anything at all.

Better discussion would be if the all americans from this year and say the best guys who have been in the league for a few years could take anybody. At least then you know you have a few proven nflers.

I guess I'm confused on what you're trying to say here. Teams start rookies all the time that are All-Americans, and its almost impossible in the NFL to go winless.

Include some rookie and sophomore NFL players along with current season All-Americans.Make a team of those and see how they do in a season. Kind of a totally new argument but at least you have proven players on that young team.

I'll still take the NFL team

Yes, but those rookies on offense are supported by a veteran NFL line. The rookies on defense make mistakes which are covered up by the play of their veteran counterparts.
Look at Mark Ingram. He's averaging 3.9 yds per carry behind a respectable NFL o-line this year. Last year in college he average 5.5 yrds per carry. How well do you think he would do against an NFL defense being a year younger and running behind a college line? He'd be lucky to average 2 yds per carry.
