Analytics work great over the course of an entire season when the point is to score as many runs over the span of many games.
The equation changes in the post season. If bunting was always the wrong call then the best coaches in college baseball would never do it.

Coaches at all levels tend to be very risk averse and people in general don’t like change or being criticized. If you go against the established accepted strategy and it doesn’t work you will get blasted. So they stick with it. Even though it’s demonstrably the wrong move.
