wouldn't it be more important for an OG than an OT because they pull more often?

When they pull they don't really get full speed in a straight line. JMO, but it wouldn't really matter much for either of them. Now shuttle runs and really short sprints would probably be where to really evaluate O lineman.

40 time isn't important at all and it's a pointless stat. Football speed is more important than sprint speed.

I wouldn't say it is pointless. Ali Highsmith went from a second or third round draft pick to not getting drafted because of his 40 time.
