So here's what happened:
The secretary that I talked to thought I was asking about paying off our mortgage and THEN INSURING FOR AN AMOUNT THAT WE WANTED. THAT's why she said we "couldn't" because YOU CAN'T insure for less than 80% of the value.
So there's my answer.
In other news, we're with La Citizens through FB. LC increased our dwelling policy by $100,000 and our premium went from $3270 to $7500 or so. Our parish also had an 88% increase overall.
So my question is now answered correctly and we're shopping around. Got a quote from Cajun Underwriting with a better policy/price BUT are they any better than LA Citizens should we opt to not self insure?
(And yes my title was very poorly worded which is funny because incorrect grammar is my pet peeve.)

We actually have a separate fire/theft policy ($700 or so per year) with FB and wind/hail with Citizens.

I know
and I figured I could change it or laugh at myself ... I was in such a rush to type out my question in the post that I totally screwed up the subject line. Oh well....
