We will stay 1 night in a hotel in Miami
Stay at the Viceroy. Gorgeous hotel that is top notch, just plan on taking a cab if you want to do anything. I think the GF and I got it for $80 a night this past summer.

We stayed at Hyatt Regency Pier 66. It's one of those cruise hotels, although we weren't going on a cruise. Just a night in FLL before heading back. Would recommend it. We paid $90 as well.

Do you know how she was able to get it for $80? Just a quick check on their website appears that rooms are $299 a night.

3 recommendations: 1) Barclays Arrival+ - This one will cover $440 of your travel expenses 2) Chase Sapphire Preferred. See post about this on my long post to LSU Delirium to maximize points between you + wife. 130K UR (60K per card) = $1625 in statement credits for Travel expenses 3) Citi Premier - Same as above. This is for the 40K offer though. Dig around for the 50K one. Highly suggest you to go for Chase cards first.
The airfare through Southwest is only about $150 round trip per ticket ($300 total for me and wife). I imagine one night in the hotel would be $200 maximum. That's a total of only $500 for flight and hotel. Can these rewards points be applied to the actual purchase of the cruise as well?

If you are going to fly southwest, and you go for the Chase card, transfer points out of Chase to Southwest first at 1:1. These points will then be worth 1.4c at least (instead of 1.25c).
Yes, you can apply these points to any travel related expenses at the rate of 1.25 cents per point.

I just called my home mortgage company to see if they accepted payments with credit cards with no fees. They do not accept credit card payments. Is this common for mortgage companies or is there any loop holes? I'm just wanting to make sure I can hit the $4,000 in 3 months with my normal expenses.

Plastiq
This is a service that will charge you 3% to send someone a check. You can use your credit card to fund that check. I would use the card for your normal expenses. Come close to end of 3 months and you are still a few away, use plastiq to cover the difference. Even if you did the entire $4000, you are paying $120. Not the best, but you are still making points worth at least $750. Additionally, if you read this thread, you will realize, 1.25c is not the best value for Chase points. They can be significantly more valuable. But may be worth it for you if it is the difference between going on a cruise and not going on a cruise

So for instance, if my mortgage were $1,000 per month and I did this for three months.
I'd be looking at $90 in fees for those three mortgage payments. Basically I'd be subtracting $90 from the $625 travel rewards after 3 months?

Exactly. But if you read the offer for the CSP carefully on the app page: LINK. You will notice you will earn an additional 5K points for adding your wife as an Authorized User. And you will also be earning $4,000 points at least for completing the spending requirements. So you are ending up with a little over 59,000 points after those bonuses, equivalent to at least ~$740

Hotels .com had them on there as empty for the night we stayed.

Sapphire
I'm guessing that means you have the Sapphire. Go for the Hyatt and the IHG then.
Alternatively, If you have a companion, then go for SW Premier and SW Plus. Find the 50,000 point offer for SW plus by digging around on google. Or go for the SW Premier Business. 50K bonus on each card. End up with 104K after spend. 110K points in a year = Companion Pass.
