I'd possibly hold off on the Sapphire preffered in hopes of a higher bonus offer & consider the 60k point Chase Ink offer that runs through the month. It gives 5x on cell phone bills/cable bill/office supply & 2x on gas/hotel and 1x on everything else. It's a business card but does not require an EIN.

How often are you flying?
If you are only flying a couple times a year I would just airline hop and use the signup bonus' for free flights as many others ITT do. If you fly more than 20 segments in a year I would look into committing to one airline.
I have gone the delta amex/regular amex route and road it to some really nice bonuses and perks. Earned about ~500k worth of skymiles last year between bonuses and flying and converted that to two RT business class seats to London this summer.
The DL Gold Amex typically has the 50k miles bonus with no signup fee but I don't know if I would use that as my everyday card.
If you are only flying a couple times a year I would just airline hop and use the signup bonus' for free flights as many others ITT do. If you fly more than 20 segments in a year I would look into committing to one airline.

Wouldn't getting a new credit card all the time really hurt my credit rating?

That would be a question for Teddy and others who really churn cards but the general consensus is that unless you are buying a house soon, it really isn't a problem.

Domestically,
Generally, the two best domestic award redemptions are the British Airways Avios(which is a transfer partner of the Chase Ink & Sapphire cards and AMEX cards) and Southwest(Transfer partner of Chase cards).
British Airways partners with American Airlines, so you can book any of their award flights with your Avios.
American express cards such as the AMEX Premier Rewards Gold(There's a 50k point offer out there) offers transfer bonuses to Avios often. They just did a 40% bonus(e.g. 50k points turns in to 70k avios).
You don't want an airline branded credit card since you aren't paying for the flights. It will just restrict your options.

I like Delta the most, but right now I live in BR and will hopefully be moving to Houston, so AA is probably the best bet.

How is your credit? Are you making any big purchases, such as a house, soon?
I apply for 6-8 cards/year and my credit is very good to excellent. Bounces between 750-810 depending on timing.
My wife does the same. Her credit improved greatly playing this game. She stays in the 760-790 area, but I'm a little more conservative with her accounts.

Nope. You might take a small hit to your score here and there but over time used responsibly it will only strengthen your credit profile. I've opened 9 new cards in the last 10 months and my score has risen overall.
I'm not concerned with having the highest credit score possible. There is a point of diminishing returns that kicks in around a 750 score.

The available revolving credit will help your score against the negative impacts of the credit pull. It will be a good thing for your score if you keep your utilization low(Under 10%).
My recommendations would be the Chase Ink Plus LINK. It does come with a 5k minimum spend though.
or
Chase Sapphire Preffered: LINK It comes with a 40k point(add an authorized user get another 5k) with a minimum spend of $4k.
These cards will transfer to Southwest and AA(through Avios) and will work well for BTR/MSY/HOB/IAH.
