Why were our 80's 90's teams upset in late season games?

Not just LSU. Was common in all of CFB.

A big win followed by an upset to average Missippi State, Ole Miss or Tulane.

Was the gameplan different?

Why isn't this as common today?

I know the Saban/Belichick philosophy of staying in the present/not looking ahead is now used by everyone.

Which why Saban's comment about his team being nervous and not focused is really peculiar. His team was nervous about a game they were favored to win and not focused on the biggest game since Clemson in the championship game? Really? They couldn’t focus on the only truly significant game they have played , a game that may well determine whether they get to the CFP. Saban is a great coach, but what does this say about the current state of things at Alabama?

That entire Alabama team and fanbase has been watching LSU on film since game 1. The analyst and coaches watching in great detail. They knew what they were in for. They also were not battle tested and came out of the gate very flat.

Saban's body language in the pre game sideline interview lacked confidence and his team seemed to reflect that.

They were not flat. They ere actually nervous and tight.

The game has passed Saban by and he has lost the team. The Dynasty is crumbling

Agree. I always thought we'd win.

Wasn't the jinx playing them at home? On the road we've beaten them plenty.

We weren't as good then and so we got upset more than we should, just in general. To win a game like UF '97 we had to play perfectly and get some breaks too. A game like that was our super bowl and it's understandable that there'd be an emotional letdown after that.

These are college kids - many of whom are teenagers. I feel like a lot of people forget that.

At first I was going to disagree, but your overall point is right. Most of the time, we were probably worthy of being ranked in the teens, and we'd have a letdown after a big game.
Since the Saban/Miles/Orgeron days, we're basically a top 10 team, and that letdown would mean a close win over somebody. Back then, a letdown would mean a loss.

The Jinx was running an outdated offense that made life easy for Saban to prepare for that had no tempo.

LSU attacked Nick's Cover 3 beautifully all day

Because we usually had to play Miss State after bama and they gave us hell. As did Arkansas.
