What type of grass?

I'm getting ready to do some leveling and grading work done in my backyard along with adding a bit of fill sand in the process. I'm looking to see what type of grass I should go with over it that does well with water and absorbs as much as possible. I'm on about 3 acres, so I have a hodgepodge of different grasses and a lot of trees, but this area is mostly pretty sunny. Hoping to find something that fits the bill but also grows quickly. I'm in Slidell.

Grows quickly as in from seed to grass, or in between mows?

Need more info. You say 3 acres but it seems you’re only talking about a small section. Do you have grass on the rest of the property? How much work are you looking to put into maintaining your grass?

No, I'm looking either from seed or even putting sod patches down to hopefully spread out and fill in entire area eventually. It's a pretty large patch of area that will be affected once they're done with the grading, so sodding it all is out of the question.
Looking for minimal maintenance. I do your typical weed and feed but usually not much else other than that. Not opposed to doing more but definitely not looking for anything super picky giving the amount of overall property.

Of course, I wouldn’t expect you to shell out $100k to fully sod 3 acres. You say grows quickly, so I wasn’t sure what exactly you meant.
With that large of an area, I would consider sodding the area closest to the house so you’d have a pristine lawn to enjoy now, and hydro seeding the rest.

Over the years I've come to like plugs vs checkerboarding. That being said your seeding options would be bermuda, zoysia, or centipede. I haven't seen zoysia do well from seed. Tifblair centipede seed is supposed to be an improved variety but I have no experience with it. It became popular after I moved out of Baton Rouge. You can establish a really good lawn quickly with bermuda seed. However it will never grow around your trees/shaded area.
You can do what 419 said and sod 50 feet off the back of the house and then throw out the seed of your choice over the back 40.
