Removing a built-in gas grill?

Moved into a house with a small outdoor kitchen that was not very well planned. Long story short, I'd like to rip out the existing built-in gas grill and replace it with something. Since it's set in a granite countertop, I was thinking maybe rout a piece of butcher block big enough to fill the hole where the grill was. Dunno how well that would do though since it's somewhat exposed.
Anyone ever done this or have any thoughts on it?

not sure if possible with your setup, but maybe an insulated-bottom butcher block as a lid and an ice chest underneath?

could you replace it with a sink?
if not, then just put an ice chest there

You can put a griddle there instead. Most have a lid so it’ll be almost flush like a butcher block. It’ll be more expensive but at least it’ll be dual purpose.

Already got a sink on one side and a fridge under the counter on the other (there's a lot of shite crammed in this small space which is part of my gripe). In a perfect world, there would just be more granite, but that'd be a new whole new countertop I assumed, hence the butcher block to plug the hole.

A griddle would be a decent replacement as long as the lid was solid enough. I imagine trying to find one to fit the existing hole may be tough though.

could you buy slightly larger and have it cut to fit?
