Completely agree.
100% installer error.
Some better thin sets will give an installer a little more room for error, but even the best will not make up for sloppy work.
Custom Blend is a no go. Tried it once because it was 3.00/bag and Master Blend was about 8.00. Never again. It is good for a filler underneath cement board, though. No need for Versa Bond there. Versa Bond is a good all around mortar.

Only problem with this is that if you ever decide you want a different look on the floor, ripping up the tiles that go under the cabinet is more difficult than if the tile had been installed after the cabinets.

If you ever change tiles. It’s much easier to remove and replace with new. I always set cabinets first. But that’s me.

I’ve changed tiles. Many times. It’s not as difficult as you think.

(You don’t have to remove the tiles under the cabinets, just break them off under the toe kick, close as you can).
Not too difficult, not too fun, but better than cutting all the tiles around the cabinets to begin with in the event you may want to change the tiles and not the cabinets in the future.
Not too fun grouting under the toe kick either. Better to do it all before the cabinets go in. (My opinion).

Yes, it is yours. The odds of folks keeping the same floors over the years, slim and none. My last BTR home, I changed floors, three times within 15 years. Once again, that’s me.
