Got this invasive species popping up all over my backyard. I've tried digging them all up and a few weeks later about 3x as many came back. Dug them up again getting as much of the roots as I could. I think they're coming from my neighbors yard underneath the fence. What are my options here? I have fruit trees and dont want to go scorched earth with herbicides.

You are going to have the dig, pull, cut, paint with glyphosate. You'll have to do this over the course of 40-50 years give or take.

Keep a pump-up garden sprayer loaded with glyphosate and add a teaspoon of dish soap….destroy knotweed at will.
