I'm looking to get a quote on a cinderblock 5000 sq ft daycare center in Gonzales/Prairieville area.

Why do CMU at 5,000 SF? You don't have fire wall concerns with respect to total square footage and a fire protection system.
I'd go stick frame or pre-engineered building for the structure.

CMU exterior has pros and cons just like everything else.
OP if your building is relatively a square or rectangle and the eave height isn’t too high CMU is a good option at the moment with steel prices elevated
