The secret for me is training myself to not get “bored” .I find joy in other things and made food a necessity for life. That has helped a lot because at the end of the day you are going to eat a lot of chicken or turkey.
It was an adjustment because I love food. So I invested my energy into something else as a replacement and made food just fuel for life.
So far so good :-/

Incorporate more seafood. Salmon, shrimp, scallops, etc. You can season them how you like so long as you keep it healthy. Usually, these are quick meals to cook. And probably better for you than chicken and turkey.
Keep variety in your sides as well. Plenty of non-starchy vegetables —- squash, zucchini, mushrooms, onions, etc. Make a large vegetable dish that lasts a dew days then go to something else. Trade regular salads for chopped salads occassionally, just leave out the unhealthy ingredients in those bags.

Pizza
This is really good. It's more of a keto diet food, but if you miss pizza this is a better option.

These are awesome.
There are lots of sites that will give you plenty of options. I found that there is no shortage of food out there, and certainly no shortage of ways to cook it. My favorite is ground turkey meat balls. I didn't have the recipe pulled up to link. Ate ground turkey tacos this week, that were delicious.
This is really good. It's more of a keto diet food, but if you miss pizza this is a better option.

My go to meal prep is buying 3 lbs of ground turkey (85/15 not necessarily so lean), throwing it on the stovetop with some onion and fajita seasoning, then putting rice with frozen spinach in my instant pot and throwing that all together at the end for a pseudo stir fry. Mine is probably around 600 calories (6-8 oz of meat 1 serving of rice and spinach with some oil) and it fills you up right. Throw some hot sauce on it and you are in business.
I also sous vide a ton of my meat then do broccoli and potatoes. Pork tenderloin/chops are a great alternative to turkey/chicken, but i do eat a ton of both of those as well

I do something like this for lunches. Throw together ground turkey, onion, bell pepper, carrots, peas whatever else and mix with tomato paste and spices. It's a low carb lunch that tastes good cold.

If you are going keto just take out the rice
Also I don’t meal prep for the week, instead I just cook my beef, steak and chicken that will last a few days and put them in containers. Cook rice for the week.
Then just cook veggies as needed and throw together what I want. It’s so I don’t have to eat the same pre laid out shite all the time
