So trying to stay keto for a bit, and I like chili. I normally use stewed tomatoes and brown/drain the meat (90/10 and hot breakfast sausage) before putting it in the pot to simmer.

I changed it up this morning. I didn't use any tomatoes, used 80/20, I didn't drain any of the meat after browning.

My thought was to keep the fat from the meat in order to up the fat/protein ratio. I think I'm good on the carbs with just green chili peppers and seasonings.

Right path, wrong path, any suggestions for next time?

I had chili last night an I knew it was going to be all protein and carbs, so I threw in cheddar cheese and an ounce of cream cheese to my bowl and let it stir in. Take that macro nutrient ratio

Oh and some sour cream and 1/2 avocado. I just had the rest for lunch. It was delicious.

No beans.
There's a nice puddle of grease on top from not draining the Chuck or the breakfast sausage.
