I'm 6' 187 and I have to eat 2800 just to maintain. I also lift weights 4-5 times a week. If I had this diet, I would starve.

That’s way too low. You’re going to be in a catabolic state and lose a lot of muscle. Basic functions will start to shut down if your working out at that level. You’re going to be skinny fat.
Where are your carbs? You should be at 1900 - 2000 calories if you do any weight lifting to cut. But maintain muscles at 175 lbs you should be around 2300-2500. Your macros are off as well.
Don’t be afraid of carbs. Protein should be .8 to 1 gram per body weight, healthy fats and the rest carbs. Wheat bread isn’t nutritionally dense. Get rid of that shite. Oatmeal, brown rice and sweet potatoes should be on your menu.
If you need 1300 calories a day to maintain weight your aren’t putting in the effort at the gym. You must feel like a zombie during the day.
Use If it Fits Your Macros calculator to find your maintenance level. I think it’s more accurate.
