Do they use a “common” ball for all or do they use the ball they use in competition?

they normally use their own ball

Saw a thing where they go in the club house and pick the balls they play and can use those

Their own ball. If you've ever been to the range at TPC Louisiana you can see all the different brands

Once they pick the range, do they sort them by hand? That sounds like a pain in the arse.

Usually there is at least one offering from each brand. There are multiple volunteers at the Zurich sorting range balls all day.

It's not that bad. I've done it before volunteering at one of the PGA tour stops.
I volunteered for a 6 hours shift doing the range/practice area. I spent about a couple hours sorting different balls and the other 4 chilling and watching the pros go through their practice/warm up.
The craziest thing to me were the guys who just came off of walking 18 holes of weekend tournament golf in 90+ degree heat and then did another hour or two on the range.
This was on top of their warmup AND finishing up round 2, which had to be cut short and finished saturday morning.
So some of these guys that I saw on the range saturday afternoon after their round were still going after essentially 8+ hours of straight golf.
These guys are different.
